I am sharing my favorite Southern, holiday recipe that will both be requested for years to come and helps provide meals to the hungry: Chicken Bog made with a Riceland Foods Gift box! For the holidays, my huge family always brings an insane amount of dishes: mashed potatoes, sweet potato soufflé, candied ham, fudge, turkey, etc.
Unfortunately I am allergic to gluten, sesame, soy, and all tree nuts, so I have to watch what I do consume at family gatherings as the options are all so tempting! With the rise of pesticides and fertilizers, more and more people are developing allergies to gluten. This year, I decided I want to bring something everyone can eat, regardless of allergies, yet filling and full of flavor. It does not get more southern, traditional, or tasty than this easier Chicken bog recipe made with my Riceland Foods Gift Box.

What You Need
- Riceland Foods Rice
- Butter
- 6 chicken thighs
- 1 pack Kielbasa sausage (buy a Gluten-free variation)
- Celery stalk
- 2 Carrots
- 1/2 Onion
- 4 cloves of garlic
- Chicken Broth (buy a Gluten-free variation)
- Garlic powder
- Bay Leaves
- Italian seasoning
- Salt & Pepper
Meal Prep
First, we gathered all the above ingredients. I peeled and sliced the carrots. I cut the celery down the center and then into slices. We round-sliced the sausage, diced the onion, and minced the garlic. The garlic is set to the side.
My husband Brad melted the butter in a large pan and inserted the thighs skin-down for 5 minutes, until the skin could peel off.
After cooking the thighs in butter for approximately 5 minutes, we used tongs to remove them from the pan. Brad pulled the skin off the thighs while I added the celery, carrots, onion, and sausage to the pot. I stirred these to avoid sticking to the pan until they began to soften after 5 minutes. Next, I added the minced garlic for 30-60 seconds.
We returned the skinless thighs to the pan after browning the sausage, celery, onion, carrot, and garlic. At this point we added the remaining ingredients and spices – all except for rice. We brought the pan to a simmer and let the chicken cook for 20 minutes. We use a thermometer to ensure the chicken is fully cooked to 165 degrees Fahrenheit. Once cooked, the thighs are again removed and shredded. Discard any bones or unfavorable parts of the meat.
Add and Cook Rice & Shred Chicken
Before shredding the chicken, we poured in the Riceland Foods brown rice from our Gift Box. We allowed rice to simmer, stirring and adding water as often as needed. Brown rice requires longer soaking than white rice. We tasted-test small pieces to ensure it is cooked thoroughly.
Once rice is soft and ready, we add shredded chicken back to the pan. We mixed it up, let cool for 5 minutes, and then reaped our reward!
Final Product
This dish is my husband and my first attempt at chicken bog. We have talked about giving it a try as it is a popular local and low-country dish. The process is slower than your average meal, but directions are easy. The final dish is bursting with hearty, full flavor! We were impressed with ourselves if you do not mind me saying! It was also great to spend quality time cooking together during our first snow day of the season.
